does anyone know whats the softest road legal tyre you can get in 195/60/14

Im not sure about that size, but you should get close with something like a yokohama ao48, or toyo 888

Toyos mate, the new 888's are very good. A friend just put them on his Sud which he uses on track days also, they are nice

I know the ao48's are available in that size, but unsure about the 888's.
A move to 15" wheels would make road legal tyre choice much easier and less painful in the wallet i suspect.
An equivalent to the 195/60/14 in rolling radius terms would be the 205/50/15, which on the right size wheel would give you a gain in footprint and sidewall rigidity too,
